RECIPE:
Ingredients:
(1) Base
1/2 apple pealed and sliced to bite sized pieces (1/4” cubes) (you will use the other half of the apple for the apple filling)
1 cup almond flour
1/4 cup coconut flour
1/4 cup vanilla protein powder
1 tsp baking powder
1 tsp cinnamon
1/4 monkfruit
3 tbs unsweetened apple sauce
4 tbs almond milk
4 tbs cup coconut oil
1 whole egg and 2 egg whites
(2) Crumb topping
1/4 cup almond flour
1 tbs coconut flour
2 tbs monkfruit sweetener
1 tbs cinnamon
1 tbs coconut oil
1/2 tbs apple sauce
(3) Apple Filling
1/2 apple pealed and sliced to bite sized pieces (1/4” cubes) (using the other half of the apple)
2 tbs monkfruit
Juice of 1/2 a lemon
1 tbs cinnamon
1 tsp coconut oil
(4) OPTIONAL: honey or syrup to drizzle on top.
Directions:
Preheat your oven to 375F and make sure that the oven rack is in the middle section of the oven,
In a large bowl, whisk together the dry ingredients of the base, then add in the wet ingredients of the base, including the 1/2 diced apple, and mix until all the base ingredients are fully combined (the batter is thick),
Grease a baking dish (I use an 8x8 square and if you use a different size then you may need to adjust the bake time) and optional to line it with parchment paper (I prefer this so it pops out easily),
Pour the batter into the baking tray and smooth the top out with a spatula or spoon,
Bake for 30 minutes,
While the base bakes, prepare the crumb topping and apple filling....
Crumb Topping: in a small bowl, whisk the dry ingredients, then add in the wet ingredients and mix with a spatula or your hands until fully combined (should be a the texture of crumbled cookie dough),
Apple Filling: In a small bowl, combine the filling ingredients,
When the base is done baking, remove from the oven, sprinkle the apple topping sporadically over the base and pour the remaining juice from the filling over the base as well,
On top of the apple filling, use your hands to crumble the crumb topping into small pea to dime sized pieces and sprinkle the topping to cover most of the base,
Place the dish back in the oven and bake for another 25-30 minutes,
Remove from the oven, allow to cool, cut into squares (drizzle honey or syrup on top if you choose to do so) and ENJOY!
