This Tik Tok trending salmon blew through our kitchens this past year and has become a staple in mine. I created my own spin on this delicious dish and I know you will love it too. Bored of your typical salmon recipes? Try this one to change it up!

Ingredients
Teriyaki Salmon Ingredients
8 oz. salmon filet
1 Tbsp soy sauce
1 tsp sesame oil
1 tsp hoisin sauce
1 Tbsp rice vinegar
1/2 Shallot, minced
1 Clove garlic, minced
Bites Ingredients
1 Package of mini rice paper wraps
1 Zucchini, diced
1 Large carrot, diced
1/4 White onion, diced
1/2 Avocado
1/4 Cup avocado oil
Dipping Sauce Ingredients
1/2 Cup vegan or regular mayonnaise
1 Tbsp sriracha or hot sauce of choice
1 tsp sesame oil
1 Tbsp soy sauce
1 Tbsp honey
1 Tbsp rice vinegar
1 Tbsp sesame seeds
1 tsp garlic power
1 tsp onion powder
Directions
Add the salmon filet to an airtight container or bag with the salmon marinade ingredients. Shake to fully coat the salmon and allow the salmon to marinate in the fridge for no less than 20 minutes or as long as overnight.
Once the salmon has marinated, preheat your oven to 400F and set aside a greased baking sheet.
Transfer the salmon to the greased baking sheet and pour the excess marinade over the salmon. Bake for 18-23 minutes depending on your temperature preference.
Remove the salmon from the oven and allow to sit for 10 minutes. Then cut the salmon into small 2" cubes and set aside.
Place a large sauté pan over medium heat and add 2 Tbsp of avocado oil to heat.
Once the oil is hot, begin to assemble the bites, first by quickly dipping a rice paper wrap in ice water and then laying flat on a clean surface. After about 10 seconds the wrap should be sticky and mailable. Place a cube of salmon, a pinch of carrot, zucchini and onion in the center of the wrap. Fold the wrap over the filling ingredients and place the bite directly in the sauté pan to fry up for 3-4 minutes on each side. Repeat with the remaining wraps.
Pan fry the bites in batches until complete, adding 2 Tbsp of avocado oil at a time when needed.
While the bites pan fry, prepare the dipping sauce by whisking together the ingredients in a bowl. Season with salt and/or pepper to taste. Serve the bites fresh with the dipping sauce and enjoy!
Storage: while these are best eaten fresh, they can be stored in an airtight container in the fridge for up to 2 days.
