Low Carb High Fiber Double Chocolate Brownies

These rich chocolate brownies are dense, delicious and perfect for a chocolate lover. Enjoy them alone, with a scoop of ice cream or crumble it up in a yogurt parfait!

Everyone‘s favorite treat, the chocolate dessert that falls somewhere in between a cookie and a cake, brownies are the key to my chocolate loving heart. This recipe makes a healthy and low carb version of the dessert we all know and love. It is super rich and dense, great with a glass of almond milk or a scoop of greek yogurt!
NUTRITION: only 150 calories per brownie, with a whopping 18.7 g of FIBER and only 4.6 Net Carbs PER BROWNIE!

RECIPE:
✔️INGREDIENTS:
- 6 tbs peanut butter
- 2 large eggs
- 1/2 cup Lokanto Monkfruit Maple Syrup
- 1 tsp vanilla
- 1 tsp baking powder
- 1/2 cup unsweetened coco powder
- 1/3 cup almond milk
- 1/4 c almond flour
- 1/4 c oat fiber
- 1/2 Cup Lily’s Chips
✔️INSTRUCTION:
- Mix all ingredients together, bake at 350F for 32-35 minutes. Store in the fridge for 5 days.




I made these brownies today and they were delicious.
I used a mini loaf tin, split into 12 mini loaves, and cooked them for 25mins at 180c fan oven. Next time I make them, I will reduce the cooking time so that they have a more fudge like texture.
I did make a lot of substitutions based on what I already had in my cupboard. They didn’t have quite as much fibre, due to the substitutions, but did have a reasonable amount of fibre which was the reason I wanted to try this recipe.

I am going to make these. They look great. The only change I will make is to use the Choczero maple syrup because it does not have erythritol like Lakanto does. Thank you for this recipe!
