These juicy and flavorful Mediterranean Salmon Pita Pockets make for the perfect lunch or dinner all year round. They are bursting with flavor from the Mediterranean Salmon and fresh crunch from the cucumber and tomato. You can't go wrong with these!

Ingredients
1 lb. Wild salmon
3 Tbsp Extra virgin olive oil
2 Tbsp Apple cider vinegar
2 tsp Dried Basel
2 tsp Dried oregano
2 tsp Garlic powder
1 tsp Kosher salt
1/2 tsp Black pepper
1/2 Small cucumber
5-7 Cherry tomatoes
1/2 Cup Crumbled feta cheese
1/2 Cup Fresh parsley, roughly chopped
2 Pita Pockets of choice
Directions
Prepare the salmon following the recipe for my Mediterranean Salmon.
Finely chop the cucumber into bite sized pieces and quarter the cherry tomatoes.
Once the salmon is cooked according to the Mediterranean Salmon recipe, assemble the pita pockets with the salmon cubes, cucumber, tomatoes, feta and parsley, and serve fresh.
