This is one of my favorite healthier treats I have ever made! The creamy frozen bananas topped with the crisp chocolate shell, creamy peanut butter drizzle and crunchy cookie crumble make this an explosion of flavors and textures in your mouth. This is the perfect healthier dessert for picky eaters and for kids. Try this simple recipe at home or make it for a friend with a sweet tooth.
RECIPE
Ingredients (serves 6)
2 Large ripe bananas
2 Cups chocolate chips
1/4 Cup creamy peanut butter
3-4 Cookies of choice
6 popsicle sticks or long tooth picks
Optional: granola
Directions:
Peel and slice the bananas into thirds and press the popsicle sticks about halfway into the base of each banana piece. Place them in the freezer for 1-2 hours.
While the bananas are in the freezer, add your cookies to a zip lock back and crush the cookies with the base of cup or can. Set these aside.
When the bananas have hardened, proceed with melting the chocolate on a double boiler or in the microwave in 20 second increments.
Carefully dip the bananas into the chocolate to fully coat and place directly on a parchment lined plate.
While the chocolate is still soft, drizzle the creamy peanut butter and then sprinkle the cookie crumbs (and optional granola) over the bananas.
Place back in the freezer for at least 2 hours and then enjoy as a frozen treat!
Storage: store in an airtight container in the freezer for up to 3 months.
