Oatmeal Breakfast Squares

Perfectly portioned, high protein Oatmeal Breakfast Squares are sweet with a cinnamon flavor and perfect for a breakfast on-the-go. I love this as a healthy and high protein breakfast option with minimal ingredients. These are so easy to make and perfect for meal prep. Simply individually wrap each square and store in the fridge, so when you need your breakfast you have these ready for you.

Recipe

Ingredients

  • 2 Cups rolled oats

  • 1/2 Cup vegan protein powder powder

  • 1/4 Cup monkfruit sweetener (optional substitute: coconut sugar)

  • 1 tsp cinnamon

  • 1 Large egg

  • 2 Egg whites

  • 2 Tbsp peanut butter

  • 1 Cup water

  • 1 Cup nut milk

Directions

  1. Preheat oven to 350F and line an 8"x8" square baking sheet with parchment paper (if you don't have parchment, you can simply grease the baking dish with non-stick spray)

  2. In a large bowl, whisk together the dry ingredients until they are fully combined

  3. Add the wet ingredients to the bowl and mix until fully combined

  4. Pour the batter into the lined baking dish and spread the batter out evenly

  5. Bake for 18-20 minutes or until the edges are dark golden brown

  6. Allow to cool completely before cutting into four square.

  7. Optional to top with topping of choice

Storage: store in an airtight contain in the fridge for up to one week.
