Peanut Butter and Jelly Crumb Bars (low carb, grain free, dairy free)

RECIPE:


INGREDIENTS:

  • 3/4 cup almond flour

  • 1/4 cup coconut flour

  • 1/4 cup powdered peanut butter

  • 1/4 cup monk fruit sweetener (if using stevia, use 3 tbs)

  • 1/2 tsp cinnamon

  • 1/4 cup coconut oil

  • 1 egg

  • 1/2 cup sugar free jam or preserves of choice (or you can use fresh mashed berries)

  • pinch of salt


DIRECTIONS:

  1. Preheat oven to 350F

  2. Mix together all of the ingredients except the jam,

  3. Press roughly 2/3 of the dough into the base on a parchment lined loaf tin (or mini loaf tins),

  4. Bake for 14 minutes or until golden brown,

  5. Using jelly of choice, coat the top of the loaf(s) with a thin layer of the jelly And then crumble the remainder of the dough on top,

  6. Bake for 10-12 minutes until top is crisped.
