RECIPE:
INGREDIENTS:
3/4 cup almond flour
1/4 cup coconut flour
1/4 cup powdered peanut butter
1/4 cup monk fruit sweetener (if using stevia, use 3 tbs)
1/2 tsp cinnamon
1/4 cup coconut oil
1 egg
1/2 cup sugar free jam or preserves of choice (or you can use fresh mashed berries)
pinch of salt
DIRECTIONS:
Preheat oven to 350F
Mix together all of the ingredients except the jam,
Press roughly 2/3 of the dough into the base on a parchment lined loaf tin (or mini loaf tins),
Bake for 14 minutes or until golden brown,
Using jelly of choice, coat the top of the loaf(s) with a thin layer of the jelly And then crumble the remainder of the dough on top,
Bake for 10-12 minutes until top is crisped.
