This sheet pan frittata is the easiest way to prepare breakfast for a large group or for meal prepping a weeks' worth of breakfasts. This recipe is packed with veggies and flavorful herbs, adding flavor without many ingredients. Ingredients
1 zucchinis, sliced thin
12 eggs
2 scallions
5-6 basil leaves
1 log goat cheese (or cheese of choice)
Grease the pan
1 tsp salt
1/2 tsp black pepper
Directions
Place your sheet pan in the oven and preheat the oven to 350F.
While the sheet pan and oven pre-heats, begin to prepare your ingredients. Slice the zucchini into thin semi-circles. Dice the scallions and basil. Set these aside.
Crack the eggs into a large bowl and whisk until smooth and fluffy, for about 3 minutes.
Add the veggies, herbs, salt and pepper to the egg mixture and whisk until everything is incorporated.
Once the oven has pre-heated, carefully remove the pre-heated pan from the oven and grease well. I line my pan with parchment paper and then grease it with avocado oil spray.
Carefully pour the egg mixture into the pre-heated and greased sheet pan. Add dollops of goat cheese evenly throughout the sheet pan.
Bake for 20 minutes or until golden and puffy. Slice and serve!
