Recipe

Ingredients
  • 1 zucchinis, sliced thin

  • 12 eggs

  • 2 scallions

  • 5-6 basil leaves

  • 1 log goat cheese (or cheese of choice)

  • Grease the pan

  • 1 tsp salt

  • 1/2 tsp black pepper

Directions
  1. Place your sheet pan in the oven and preheat the oven to 350F.

  2. While the sheet pan and oven pre-heats, begin to prepare your ingredients. Slice the zucchini into thin semi-circles. Dice the scallions and basil. Set these aside.

  3. Crack the eggs into a large bowl and whisk until smooth and fluffy, for about 3 minutes.

  4. Add the veggies, herbs, salt and pepper to the egg mixture and whisk until everything is incorporated.

  5. Once the oven has pre-heated, carefully remove the pre-heated pan from the oven and grease well. I line my pan with parchment paper and then grease it with avocado oil spray.

  6. Carefully pour the egg mixture into the pre-heated and greased sheet pan. Add dollops of goat cheese evenly throughout the sheet pan.

  7. Bake for 20 minutes or until golden and puffy. Slice and serve!
