Drooling over these southwestern style turkey meatballs. These turkey balls are ooosing with cheese and spicy jalapeños, they are low carb and perfect to add to a salad, have on their own or sandwiched between some low carb bread!
RECIPE
1 Lb of lean ground turkey
2 eggs
1/2 cup extra fine wheat bran
1/2 jalapeño, minced (remove the seeds if you want them less spicy, keep seeds in if you prefer more spice!)
1/3 block of sharp cheddar cheese, cut into 1/4 inch cubes (you can use low fat shredded Mexican blend also)
1/4 cup cilantro, minced
1/2 red onion, chopped
1 clove of garlic, minced
1 tbs Worcestershire sauce
Heavy pinch of salt and a pepper
2 tbs olive oil
✔️INSTRUCTIONS:
(1) Mix all ingredients except olive oil, mix thoroughly to combine
(2) heat a pan to medium heat with the olive oil in it, cool the meatballs for about 5-7 minutes on each side to create a crispy exterior
(3) After the outside of the meatballs have crisped, place in an oven at 350F for 15 minutes or until cooked through.
Enjoy these on their own, in a wrap or on a salad! I love these for meal prep and they last in the fridge for about 5 days.
