Southwestern Style Turkey Meatballs (Low Carb)

Drooling over these southwestern style turkey meatballs. These turkey balls are ooosing with cheese and spicy jalapeños, they are low carb and perfect to add to a salad, have on their own or sandwiched between some low carb bread!


RECIPE


  • 1 Lb of lean ground turkey

  • 2 eggs

  • 1/2 cup extra fine wheat bran

  • 1/2 jalapeño, minced (remove the seeds if you want them less spicy, keep seeds in if you prefer more spice!)

  • 1/3 block of sharp cheddar cheese, cut into 1/4 inch cubes (you can use low fat shredded Mexican blend also)

  • 1/4 cup cilantro, minced

  • 1/2 red onion, chopped

  • 1 clove of garlic, minced

  • 1 tbs Worcestershire sauce

  • Heavy pinch of salt and a pepper

  • 2 tbs olive oil


✔️INSTRUCTIONS:


(1) Mix all ingredients except olive oil, mix thoroughly to combine


(2) heat a pan to medium heat with the olive oil in it, cool the meatballs for about 5-7 minutes on each side to create a crispy exterior


(3) After the outside of the meatballs have crisped, place in an oven at 350F for 15 minutes or until cooked through.


Enjoy these on their own, in a wrap or on a salad! I love these for meal prep and they last in the fridge for about 5 days.
