This is the best salad and it's packed with so much natural herb flavor. The crunchy texture from the kale and candied walnuts, the tangy feta plus the protein rich quinoa make this the most delicious salad in town. This was first inspired by a salad at a local Miami cafe and has since become one of my staple recipes to make at home. This is the perfect salad to make ahead or for a big group. It's always a crowd please.
Recipe
Ingredients (serves 2-4)
4 Cups chopped baby kale
4 Cups baby arugula
1 Jalapeño, minced (seeds removed)
1 Cup quinoa, cooked per package instructions
1/2 Cup candied walnuts
1/2 Cup feta cheese
1/4 Cup basil, minced
1/4 Cup parsley, minced
1/4 Cup mint, minced
1/4 Cup scallions, chopped
Salad Dressing of Choice - I recommend my Apple Cider Vinaigrette dressing.
Directions
Prepare the quinoa per package instructions and allow to cool to room temperature.
Roughly chop the kale and arugula and add to a large bowl.
Mince the jalapeño and add to the bowl, along with the remaining ingredients.
Toss to combine and top with dressing of choice (I recommend my Apple Cider Vinaigrette). Enjoy!
Storage: store in an airtight container in the fridge (without dressing) for up to 1 week.
