Tex-Mex Goddess Salad

Looking to spice up your taco Tuesday? This Tex-Mex Goddess Salad will do just that! This fresh, flavorful and satisfying salad is perfect for even your pickiest of eaters. The different ingredients combine to make a colorful, nourishing and delicious meal. Keep reading for the recipe!




Recipe

Ingredients

  • 1 Head iceberg lettuce, chopped

  • 2 Persian cucumbers, julienned

  • 5 Radishes, thinly sliced

  • 1/4 Cup pickled jalapeños, diced

  • 1/2 Cup cherry tomatoes, halved

  • 1/2 Cup cooked rice

  • 1/4 Cup fresh parsley, chopped

  • 1/2 Cup queso fresco, crumbled

  • 1 Avocado, diced

  • 1/4 Cup extra virgin olive oil

  • 2 Tbsp lime juice

  • 1 tsp salt

  • 1 tsp black pepper


Directions

  1. In a small bowl, whisk together the olive oil, lime juice, salt, pepper and 2 tbsp of fresh parsley. Whisk until a lime vinaigrette forms and set aside

  2. Add all of the remaining ingredients to a large bowl, including the cooked rice, and toss to fully combine

  3. Pour the lime vinaigrette over the salad before serving and enjoy!
