What happens when you combine two of the most delicious spreads into one sandwich?! TUNESTO! This is my go-to spin on the classic tuna salad sandwich. The tuna salad pairs perfectly with the creamy herb pesto flavors. This sandwich has the perfect amount of crunchy texture and vibrant flavors sandwiched between two toasty slices of bread. RECIPE
Ingredients (serves 2)
Tuna Salad
1 (4 oz.) can of albacore tuna in water with no salt added
1/2 Lime, juiced
1 tsp dijon mustard
2 Tbsp mayonnaise (avocado oil mayonnaise is preferred)
1/2 tsp honey
1/4 tsp salt
1/4 tsp black pepper
Sandwich
4 Slices of bread of choice
1/4 Cup pesto spread of choice
1/2 Cup alfalfa sprouts
1/2 large tomato, thinly sliced
Directions:
Begin by preparing the tuna salad. Open the canned tuna drain as much liquid out as possible. Add the tuna along with all other ingredients for the tuna salad to a food processor. If you don't have a food processor, you can add it to a medium sized bowl and mix it by hand with a spatula. If using a food processor, blend until smooth with some texture (don't over process).
Toast the slices of bread using either a panini press or a standard toaster. Spread the pesto on 2 slices of bread and then tuna mixture on the other 2 slices.
Top the tuna mixture with the alfalfa sprouts and sliced tomatoes and then press the other two slices, pesto side down, on top. Serve on its own or pair with pickles and enjoy!
