These delicious boats of yummy taco filling are the perfect healthy family dinner. Whether you are a vegetarian or not, this dish will make an amazing addition to your weekly menu. The flavors are bold and bright and its packed with nutrients. Try it yourself!
RECIPE:
Ingredients:
4 Bell peppers
1½ Cups cooked white rice
1 Cup shredded cheddar cheese (plus another 2/3 Cup to top)
⅓ Cup shredded mozzarella cheese
6 Celery Stalks, finely chopped
1 Large head of broccoli, finely chopped
1/2 Red onion, minced
2 Tbsp taco seasoning
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
Optional Garnish: Avocado, Jalapeño and Cilantro
Directions:
Preheat your oven to 375F and grease a 9x13 baking dish.
In a large bowl, add the cooked rice, cheese (saving the 2/3 Cup to top), and chopped veggies. Mix to fully combine.
Add the seasonings to the bowl and toss to fully season the mixture. Set the bowl aside.
Slice the bell peppers in half and remove the seeds.
Begin to fill each pepper half with the taco stuffing mixture and place directly into the greased baking dish. Repeat with each pepper until all halves are nestled together in the baking dish.
Cover each pepper with the remaining shredded cheddar cheese.
Cover the baking dish with a lid or foil and bake for 30-35 minutes. Remove the foil and bake for another 10-15 minutes or until the cheese is golden and melted.
