Zucchini Scallion Potato Latke

RECIPE:

Ingredients:

  • 2 russet potatoes

  • 1 large zucchini

  • 1/2 white onion

  • 2 stalks of scallion, chopped

  • 1/2 Cup almond flour

  • 2 Eggs

  • 1 Tbs onion powder

  • 1/2 Tbs garlic powder

  • 1/2 tsp salt

  • Pepper

  • 1/4 Cup oil (i use avocado oil)

Directions:

  1. Using a grater, shred the potatoes, zucchini and onion into a large bowl and then use cheese cloth (you can use a nut milk bag or paper towels as well) to drain the liquid from the potatoes,

  2. Add the potatoes, zucchini and onion back into a large bowl, add all other ingredients and mix well until fully combined,

  3. Heat a large sauté pan with the oil,

  4. Once the oil is hot, create thin and densely packed pattys with the potato mixture and drop the pattys into the oil as you form them,

  5. Allow the patty to cook well before flipping (this helps to prevent the patty from falling apart),

  6. Repeat this process until you use all of the mixture (you may need to add more oil to the pan as you go).

These are delicious served with low fat greek yogurt, chives, scallions, sour cream, or apple sauce! ENJOY!
